Course introduction

Learn the mise en place techniques in preparation of Chinese Hawker dishes.
Learn the basic skills and techniques for cooking methods of Chinese Hawker Fare.
Follow proper F&B safety and hygiene in food preparation.



Course Pre-Requisites


  • Be able to speak, read and write English
  • At least 16 years old



Course Outline


Class 1: Cooking Traditional Chinese Hawker Dishes
Academic: 

  • Understand the purpose of ingredients, their characteristics, and indicators of quality 
  • Understand Chinese names of ingredients
  • Understand the purpose of garnish
Menu: Demo and Hands-on
  • Assemble necessary equipment
  • Assemble ingredients
  • Measure or scale required amount of ingredients
  • Prepare and cook the dishes
  1. Seafood Hor Fun
  2. Bee Hoon with Sliced Fish
  3. Crispy Noodles
  4. Fried Mee Sua
Class 2: Cooking Traditional Chinese Hawker Dishes
Academic: 
  • Understand the purpose of ingredients, their characteristics, and indicators of quality 
  • Understand health and safety consideration for handling poultry
  • Understand Chinese names of ingredients
  • Understand the purpose of garnish
  • Understand indicator of doneness
Menu: Demo and Hands-on
  • Assemble necessary equipment
  • Assemble ingredients
  • Measure or scale required amounts of ingredients
  • Prepare and cook the dishes
  1. Chicken Rice
  2. Oyster Omelette
  3. Carrot Cake
  4. Hokkien Fried Noodles
Class 3: Cooking Traditional Chinese Hawker Dishes
Academic: 
  • Understand the impact of using clay as the final product
  • Understand importance of tenderising chicken
  • Understand quality standards of Chinese dishes
Menu: Demo and Hands-On
  • Assemble necessary equipment
  • Assemble ingredients
  • Measure of scale required amounts of ingredients
  • Prepare and cook the dishes
  1. Chicken Clay Pot Rice
  2. Stir-Fried Cereal Prawns/Squids
  3. Fried Bean Vermicelli with Crispy Shallots
Course Fees Details
  • The cost fees will depend on the participant’s profile.
  • Programme fee is $825
  • WTS Funding is given to Singaporeans above 35 years old, working and earning less than $2000. Net fee is $68.42
  • SME-sponsored for Singaporeans/SPRs net fees is $109.68
  • Self-sponsored for Singaporeans/SPRs ≥21 years old net fees is $109.68
  • For international students net fees is $904.15
